- Light the barbecue with firelighters and charcoal, piling the charcoal in the centre to create a concentrated high-heat zone.
- Add olive oil to a pan. Grate in the garlic, finely slice the chillies and add them to the oil. Fry over medium heat for about 2 minutes, then add lemon zest and juice. Cook gently until the garlic is no longer raw, without letting it burn.
- Pour half of the garlic, lemon and chilli oil over the prepared prawns. Massage the marinade under the shells so the prawns are evenly coated.
- Place the prawns on a clean hot grill. Cook for about 45 seconds to 1 minute per side, until pink-orange outside, pearly white inside and lightly charred. Calm excessive flames with a small sprinkle of water if needed.
- Transfer the prawns to a clean tray. Pour over the remaining garlic, lemon and chilli sauce, scatter with parsley, and serve immediately with optional lemon wedges and crusty bread.
