- Heat the oven to 200 C. Bake the puff pastry tartlet shells until puffed and golden, about 12-15 minutes, then keep warm.
- Poach the diced chicken in lightly salted water for 6-8 minutes until cooked, adding the asparagus for the last 3 minutes. Drain, reserving a little liquid.
- Melt the butter in a pot, stir in the flour and cook briefly, then whisk in the warm milk and cooking cream into a smooth, thick sauce.
- Fold the chicken, asparagus and peas into the sauce, season with salt and white pepper, and warm through. Spoon the filling into the warm tartlet shells and serve at once.
