  1. Boil the potatoes in salted water until tender, about 18-20 minutes, and keep warm.
  2. Pat the pork slices dry, season with salt and pepper and fry in a dry hot pan, turning, for 8-12 minutes until deeply golden and crisp.
  3. For the sauce, melt the butter in a small pot, stir in the flour and cook the roux for a minute. Whisk in the warm milk a little at a time into a smooth white sauce.
  4. Simmer the sauce for a few minutes, season with salt, pepper and a little nutmeg, then stir in the parsley. Serve the crispy pork with the boiled potatoes and plenty of parsley sauce.
