  1. Preheat the oven to 200 C, or 180 C fan.
  2. Heat a drizzle of olive oil in a pan and fry the onion 3-4 minutes until soft, add the garlic for 1 minute, then add the potato slices and fry 5-6 minutes until the edges crisp.
  3. Whisk the eggs in a bowl, season with salt and pepper, then stir in the potato and onion mixture.
  4. Pour the mixture into a well-oiled baking dish, about 15 x 30 cm, and bake 12-15 minutes until set.
  5. Let the frittata cool 15 minutes, then cut into 4 rectangles.
  6. Mix the mayonnaise and smoked paprika in a small bowl.
  7. Spread the paprika mayonnaise onto the wrap, add a piece of frittata, then top with spinach and sliced roasted red pepper.
  8. Fold in the sides and roll burrito style. Eat immediately, or chill and reheat until piping hot.
