  1. Heat the olive oil in a heavy pan and gently fry the onion, carrot and celery over medium heat until soft, about 8 minutes. Add the garlic for the last minute.
  2. Add the beef mince, raise the heat and brown it well, breaking up any lumps.
  3. Stir in the tomato paste and cook for a minute, then pour in the red wine and let it reduce.
  4. Add the crushed tomatoes and bay leaf, season, and simmer gently uncovered for at least 40 minutes, stirring now and then.
  5. Meanwhile cook the spaghetti in salted boiling water until al dente, then drain.
  6. Remove the bay leaf, toss the pasta with the sauce and serve topped with grated parmesan.
