  1. Cook the rice according to the packet and keep warm.
  2. Heat the garlic-infused oil in a wok over high heat and stir-fry the seitan strips 3-4 minutes until browned.
  3. Add the carrot, red bell pepper and grated ginger and stir-fry a further 3 minutes until just tender.
  4. Pour in the tamari, toss everything together, then serve over the warm rice and scatter the spring onion greens on top.
