  1. Soak the rice noodles in hot water until soft, then drain and cool.
  2. Fry the tofu cubes in the garlic-infused oil until golden on all sides, about 8 minutes.
  3. Whisk the peanut butter with lime juice and tamari, loosening with a splash of water to a pourable sauce.
  4. Toss the noodles, carrot and cucumber with the sauce, top with tofu and coriander, and pack into a box.
