- Whisk the honey and fish sauce together, then whisk in the ground long pepper or black pepper.
- Cut the stems off the mushrooms and reserve them. Slice each mushroom cap in half.
- Heat the olive oil in a large pan over medium-high heat. Add the mushroom caps and stems in a single layer and saute for 2-3 minutes, coating them in oil.
- Add the honey mixture and stir to coat. Sprinkle in the lovage or celery leaves. Reduce the heat to medium-low and simmer until most of the liquid evaporates and a glaze forms, about 3-5 minutes.
- Serve warm as a side dish.
