  1. Fry the diced bacon in a heavy pot until crisp, then lift it out, leaving the fat behind.
  2. Season the chicken, brown it well on all sides in the bacon fat, then set aside.
  3. Add the butter, pearl onions, carrot and mushrooms to the pot and brown lightly, then stir in the garlic and tomato paste.
  4. Sprinkle over the flour, stir for a minute, then pour in the red wine and chicken stock, scraping up the bottom of the pot.
  5. Return the chicken and bacon, add the bay leaf and thyme, cover and simmer gently for about 50 minutes until the chicken is tender and the sauce has thickened.
  6. Taste and adjust the seasoning, remove the bay leaf and serve hot.
