- Clean the mushrooms. Reserve 10-15 caps for garnish and slice the rest.
- Chop the onion. Heat the oil in a pot and saute the onion until softened, then add the sliced mushrooms and fry briefly.
- Add the water, season with salt and black pepper, and simmer for 10 minutes.
- Meanwhile slice the reserved mushroom caps and brown them in the butter; season with salt and black pepper.
- Blend the soup smooth with an immersion blender. Add the cream and bring back to a boil, then stir in the browned mushroom slices before serving.
