- Heat the olive oil in a large pan. Add the peeled, thinly sliced garlic and cook gently over low heat without browning it too much.
- Add the ricotta, then pour in the cream and vegetable stock. Season with salt and ground white pepper. Bring together while stirring until the sauce thickens slightly.
- Meanwhile, cook the tortellini in plenty of lightly salted water according to the package instructions. Drain it.
- Add the drained tortellini to the hot ricotta sauce. Toss gently and heat together for 1-2 minutes so the sauce coats the pasta well. Serve fresh.
