- Put the oats, egg whites, Greek yogurt, rice flour and baking powder in a blender. Blend until smooth, then let the batter rest 5-10 minutes.
- Heat a flat non-stick pan over medium heat and pour a ladle of batter into the centre.
- Cook 2-3 minutes until bubbles appear on top and the edges look set, then flip and cook 2-3 minutes more until golden and risen.
- Repeat until all the batter is used.
- Top the pancakes with Greek yogurt, the quartered strawberries and peanut butter.
