- Heat the oven to 200 C. Rub the scored rind with salt, pushing it into the cuts, and tuck in the allspice berries. Place the pork rind-up in a roasting tin.
- Roast for about 80-90 minutes until the meat is cooked through and the rind is crisp and bubbled; raise the heat for the last few minutes if needed.
- Meanwhile braise the shredded red cabbage in the butter with the sugar, bay leaf and a splash of water for about 30 minutes until soft and glossy.
- Rest the roast for 10 minutes, then carve. Serve with the boiled potatoes and the braised red cabbage.
