- Heat the oven to 200 C. Toss the potato wedges and carrot batons with half the olive oil and the rosemary on a tray.
- Roast for 15 minutes, then nestle in the chicken breast brushed with the rest of the oil.
- Roast another 18-20 minutes until the chicken is cooked through and the potatoes are golden.
- Season with salt and pepper and serve straight from the tray.
