- Cook the spaghetti in a small amount of lightly salted water so the water stays very starchy. Reserve plenty of pasta water before draining.
- Toast the coarsely ground black pepper in a dry pan over medium heat for a few seconds until fragrant, then add the butter and a ladle of hot pasta water.
- In a bowl, mix the grated pecorino with a little warm pasta water to a smooth paste.
- Add the drained spaghetti to the pepper pan, take it off the heat, then stir through the pecorino paste, adding pasta water bit by bit until a glossy, creamy sauce coats the pasta.
- Serve immediately with an extra grind of black pepper.
