- Heat the olive oil in a wide pot and soften the onion and fennel over medium heat, then add the garlic.
- Add the fresh and crushed tomatoes with the saffron, cook for a couple of minutes, then pour in the vegetable stock.
- Add the sliced potato, season, and simmer for about 15 minutes until the potato is almost tender.
- Lower in the white fish chunks and simmer for 4 minutes, then add the shrimp and mussels and cook a further 3-4 minutes until the fish is just cooked and the mussels have opened.
- Discard any mussels that stay shut, scatter over the parsley and serve hot.
