  1. Heat the oven to 190 C. Mash the crumbled tofu with the cooked quinoa, spring onion greens, parsley and garlic-infused olive oil.
  2. Press the mixture firmly into a small oiled loaf tin.
  3. Bake for 30-35 minutes until set and lightly golden, then cool before slicing.
  4. Cut into slices and eat warm or cold as a make-ahead protein snack.
