  1. Warm the olive oil in a pan over low-medium heat and gently soften the sliced garlic without letting it colour.
  2. Add the crushed tomatoes and sugar, season with salt and pepper, and simmer gently for about 20 minutes until thickened.
  3. Meanwhile cook the spaghetti in salted boiling water until al dente, then drain, keeping a little pasta water.
  4. Toss the pasta in the sauce with the torn basil, loosening with a splash of pasta water, then serve with grated parmesan.
