- Heat the oven to 200 C. Toss the potato wedges with half the olive oil, the smoked paprika and the salt on a baking tray.
- Rub the chicken thighs with the rest of the oil and the dried thyme and place them skin-side up among the potatoes.
- Roast for 35-40 minutes until the chicken is cooked through and the potatoes are golden, turning the potatoes once.
- Scatter the chopped parsley over the top and serve straight from the tray.
