- Meanwhile cook the quinoa according to the packet and keep warm.
- Fry the halloumi slices in the remaining oil until golden on both sides, about 4 minutes.
- Pile the quinoa and roasted vegetables into a bowl, top with the halloumi and finish with lemon juice.
