- Mix the tortilla flour with salt, water and oil. Knead into a smooth dough, rest briefly, divide into portions and roll thin.
- Cook the tortillas one by one in a hot dry pan until lightly browned and flexible. Keep covered so they stay soft.
- Cut the chicken breast into bite-sized pieces. Season with salt and black pepper.
- Coat the chicken pieces in flour, then beaten egg, then sweet brioche crumbs.
- Fry the breaded chicken pieces in hot oil until golden and cooked through. Drain briefly on paper towel.
- Mix Greek yogurt with crushed garlic, lemon juice and a little salt. Slice or chop the lettuce, tomato and cucumber.
- Fill each tortilla with vegetables, yogurt sauce and fried chicken bites. Fold or roll and serve immediately.
